Happy Spring! It's Eggs-cellent!

Early this morning, at 1:14 a.m., winter ended and spring began.  (New Yorkers may not have noticed; we pretty much skipped winter here anyway.)  The vernal equinox, or spring equinox, is one of two times during the year when the sun is directly over the equator and the lengths of both day and night are 12 hours. You may have been told that today is one of only two days (the other being the fall equinox) when one can balance a raw egg or a broomstick.  We’ve heard it told many times but, alas, it’s only a legend.  The truth is, it’s no easier to balance an egg today than any other day.

But, in the spirit of the spring fertility egg legend, we offer you two great raw egg cocktails.

The Red-Eye

Made somewhat famous by the somewhat popular Tom Cruise movie Cocktail, the Red-Eye is allegedly a superb cure for a hangover.

What you need:

  • 2 parts beer
  • 1 part tomato juice
  • 1 ounce vodka
  • 1 raw egg
  • splash of Tabasco

How you make it:

Fill a tall glass 1/2 to 3/4 full with beer and add the vodka.  Top with tomato juice, then add the entire raw egg and Tabasco sauce.  Enjoy!

The Pisco Sour

Pisco is an odd-tasting brandy made from the muscat grape grown in Chile and Peru, and the Pisco Sour is Peru’s signature libation.

We loveYerba Buena’s version.

What you need:

  • 2 ounces Macchu Pisco
  • 3/4 ounce lime juice
  • 3/4 ounce simple syrup
  • 1 egg white
  • Bitters

How you make it:

Dry shake all of the ingredients (except for the bitters) until foamy, then add ice and shake again.  Serve the cocktail up, garnished with dashes of bitters.  Eggs-cellent!
